Menu Plan Monday

Still planning menus at the Osborn abode. Went over budget these last two weeks, and we didn't even eat out. Whatever, here's what will be on the table this week.

tonight-the best enchiladas ever! I always make 2 batches and freeze one. corn and black beans, queso and chips

Monday-tilapia, broccoli rice casserole, peaches

Tuesday-Homemade Gourmet chipotle chicken and noodles, corn, jello

Wednesday-celebrating Kevin's birthday (one day early), probably at Pei Wei, maybe at PF Chang, NOT at Carlos O Kellys

Thursday-frozen pizza, hopefully I'll have time to cook it first-2 meetings at 2 different schools, busy night. And Kevin's birthday!

Friday-Breakfast for supper-waffle night

Saturday-Friends U. party at Eberly Farms.

Crazy week...


So, I have VERY limited time with the computer, since we don't own one. I get to use Kevin's work computer, when he's home...and not working on his dissertation. This week, I've gotten online every morning from 6:30-7am. I frantically scan my emails and head over to facebook. I must say, my house is much cleaner thanks to my limited computer use. Tonight, I"m on only because he's outside mowing.

Lots of ups and downs this week. Avery is doing well. McKenna is doing ok. Presley is fine. Kevin is 98% done with his dissertation. Lots of editing, then meeting with committee. I dream of what life will be like when he's not writing night after night. I know he wants to get done just as much as I want him to get done, so I try not to complain. The end is near.

I start teaching at Friends U. tomorrow. Just my 2 classes, voice class and vocal literature. I teach voice performance next week. I'm done with my syllabi, just need to look at it before tomorrow and figure out what I'm going to say. Guess I'll be working tonight, too.

Getting ready...

Avery is trying to figure out what to wear on the first day of school. She has 3 shirts, 3 skirts and a dress to choose from. She modeled for me this morning. And showed off her new lunch box.

Not to be left out, McKenna wants to wear this on her first day of preschool, still 3 weeks away.

Last week...

It's the last week before school starts. We're enjoying the last few days of sleeping late, going to bed late, and spending time together. I can't believe Avery will be in 1st grade. I'm starting to feel old.
  • I've bought everything on Avery's school list except hand sanitizer and sandwich baggies. She still needs some more clothes (uniform) and a new pair of tennis shoes. But, she has enough to get her through the first week, anyway.
  • I've never packed lunches before, except to go on a picnic. Avery is a VERY picky eater, so I'm looking for ideas to pack in her new lunch box.
  • Her first day of school will be much like last year. She's already requested pancakes for breakfast and nachos for supper, followed by a trip to the ice cream store.
I'm working on my syllabi for the classes I'm teaching this fall. Trying to get motivated. Not doing too well.

McKenna is very excited about starting preschool. She's NOT happy that Avery starts before she will. She doesn't go until after Labor day. I still need to get a few things on her list. And, she needs tennis shoes, too.

Presley is growing. Fast. She's signing "more"-usually when I give her a smoothie or her Dad gives her ice cream. This morning she signed "more" when she wanted to read a book. She understands the word "No" but doesn't always obey. Mostly, she hears it when she's close to the dog's water bowl, or in her sister's room, next to their princess night light. She loves bath time, she loves to play with her older sisters, and she loves to smile. She has one tooth, she waves at everyone, and just learned to blow kisses. She pulls up on everything and will be walking soon.

Our church does AWANAs during the school year. I didn't realize it would cost so much for my kids to go to church on Wednesday night. Still trying to decide if we should do it or not. Leaning toward not right now.

I posted on FB yesterday that I wanted to push a pause button for my life right now. I really do. However, I'd also like to push a fast foward button on Kevin's life, just a few weeks or couple of months. He's been working so hard on his dissertation, a word Avery and McKenna say way too much. He's taken a lot of vacation time this summer to write. I joke with him, saying he needs to get several copies of his dissertation bound, so we can give them to everyone for Christmas. I can't believe he's close to being done. It seems like forever since we/he first started this journey. I'm so proud of him. I can't wait to be the wife of Dr. Kevin Osborn!
