These are delicious!

I doubled this recipe, thinking I could put some in the freezer for later. I don't know if they'll make it that long, though. I used carrot baby food for the puree. I think these are more of a snack muffin instead of a morning muffin, just my opinion. Enjoy!!!!

super power muffins:

1 cup brown sugar (I don’t pack it!)
¼ to ½ cup peanut butter
1 banana
*optional ½ cup of apple sauce or carrot puree
1 egg
1 cup whole wheat flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
*optional ¼ cup chocolate chips
Preheat oven to 350 degrees. Mix all dry ingredients well and set aside. Blend everything else and then sift in dry ingredients. Spray muffin tray. Bake for 15-18 min. Makes 12 - double for 24.

I was actually planning to make these, too, just haven't found the time. Maybe this weekend...

Do you really have to use whole wheat flour? Does it make a difference w/ the texture?

I forgot to say this-I didn't have enough whole wheat flour so I substituted regular, I used 1/2 c. wheat and 1 1/2 c. regular. I will use wheat flour next time, just b/c I usually have it and that should make it healthier.
